The 24/25 crop of Catawba is now cleaned and available. The protein level this year is 11.9 which is higher than the previous years crop. This a wonderful wheat for making bread. We use this wheat to make All Purpose, Artisan, 95% Extraction Bread Flour and Whole Wheat. We also blend this with our Rouge for Bread Flour, 00 Flour and a Artisan Rouge Blend.
